fried green tomatoes

 

fried green tomatoes - this is the recipe you make when you already have a bunch of ripe tomatoes to cook and don’t need anymore. pluck a couple green tomatoes and fry them. i love eating this with a spicy sauce or even putting them on a gorgeous BLT!

  • 3-4 green tomatoes - preferably completely green, they are not going to hold the breading as well if they are already turning

  • 1 cup flour

  • 2 eggs, whisked

  • 1 tbsp milk

  • 1 cup panko breadcrumbs

  • 1 tsp paprika

  • 1 tsp garlic powder

  • salt & pepper

    • slice your tomatoes into ½ inch slices, place them on a paper towel. sprinkle with salt & pepper

    • prep your dredging station - it is important that every step of the way is well seasoned

      • flour: 1 cup flour mixed with ½ tsp paprika, ½ tsp garlic powder, pinch of salt, pinch of pepper

      • eggs: 2 eggs whisked with 1 tbsp milk, pinch of salt, pinch of pepper

      • panko: 1 cup of panko bread crumbs mixed with ½ tsp paprika, ½ tsp garlic powder, pinch of salt, pinch of pepper

    • using one hand for dry mixtures and one for the wet mixture, dip each slice into the flour, then the egg - make sure to let any excess drip off, then breadcrumbs

    • i started frying my slices while i was breading because i was short on time - i would suggest you bread all of your slices and then focus on the frying

    • when frying depending on the size of your pan do 3-5 slices at a time - just try not to overcrowd the pan

    • flip once for even cooking

    • when done remove from oil and place on a wire rack

    • sprinkle with flaky sea salt

    • serve with a sauce of your choice - here i made a grated tomato sauce, but you could also do a herby ranch or aioli.

    • i also love to put these on sandwiches - like a BLT or breakfast sandwich
