grilled mussels - it took me 29 years to realize that i actually liked mussels. i dont love fishy tasting seafood or most shellfish. but recently i had been jealous of how beautiful and delicious grilled seafood recipes looked so i decided to try everything again just to be sure i wasn’t missing out. and come to find out.. i was missing out. after that i knew i had to make something at home and with my fresh from the garden tomatoes of course! so here it is a gorgeous pan of grilled mussels

  • 2 lbs fresh mussels

    • you are going to need to clean and de-beard this first. which i just learned to do from youtube

  • 3 tbsp butter

  • 1 tbsp olive oil

  • 1 cup white wine

  • 1 cup cherry tomatoes, diced

  • ¼ cup shallot, minced

  • 3 tbsp garlic, minced

  • 3 tbsp fresh parsley, chopped

  • 1 lemon

    • get your grill up to medium heat and put a heavy bottomed pan on

    • add 1 tbsp butter, olive oil and your shallots. cook for about 5 min, turn the heat down if shallots are burning

    • add garlic and cook for 30 seconds

    • add white wine and close the grill. leave for 5 minutes, letting the wine deglaze and reduce

    • add the rest of your butter and all of your tomatoes. give it a stir. now immediately add your mussels. give everything another stir

    • put a lid on your pan, close the grill and let cook for 5 minutes

    • while that is cooking, this is a good time to butter your bread and add it to a low heat portion of the grill

    • after 5 minutes, lift the lid and check if the mussels have opened. if most have, turn off the heat

    • add the juice of ½ a lemon and parsley on top

    • serve this warm crusty grilled bread on the side and lemon for garnish
